Light and fluffy strawberry marshmallows


Marshmallows are becoming a bit of a 'thing' at the moment, they're the new cupcakes (well that's what everyone's saying!!) The quintessential element to a childhood mug of creamy hot chocolate and now the classic sugary bite sized sweet is moving towards gourmet, grown- up fare.

Easy BBQ Flatbreads with garlic herb butter



I'm back! I didn't forget my blog existed or anything, I've just not been able to post for awhile due to several reasons. 1. I've been getting some work experience at Laurence Hudghton Photography, I learnt loads of food style'y tips and tricks and helped out on various shoots. 2. My kitchen is in a right old state at the minute and has been for a few weeks but the good news is it will all be back to normal soon and I will have an oven to work with again. Phew!

Will you be queuing up for so-called “Trendy Toast”? I certainly won't be.

Well it has been a busy week for me, I went to University College Birmingham on Saturday to explore what they had to offer on their 'Food product and innovation' course and it sounds right up my street!! I was very impressed with their new food laboratories, kitchens, sensory  and photography suites... food styling here we come.

Goats Cheese, Garlic, Parma Ham and Thyme Couronne


When it comes to savoury bakes I immediately turn to bread. I'd seen Paul Hollywood make a sweet version of this couronne (crown) with mincemeat and marzipan on The Great British Bake Off Christmas Masterclass and it just looked so fun and inviting to make, with the cutting and twisting (it's really quite easy) but looks impressive enough to be straight out of an artisan bakery.

Exam season is here (ahhh) and I'm now in full revision mode (urrghhh), this means lots and lots of reading...but unfortunately not recipes. Sad, I know. But not to worry guys because I like to plan way ahead for times like these, sorry for sounding so smug but I am pretty pleased for myself - it has to be said!  I've had this post up my sleeve for a while now and I think it's time to finally whip it out. Rhubarb and Strawberry Nutty Oaty Crumble


It's officially rhubarb season and what better way to celebrate with a good old crumble. I can often find that rhubarb is a bit too tart for me (you know the one where you have to purse your lips together - resembling a selfie pout?!) so that's why I've added strawberries for a bit more sweetness and what a match made in heaven it is...also peaking at their best just recently I've noticed - tender and juicy plus a reason why not to add lots of sugar to this recipe.

Filo Eclairs



This is some sort of an invention that I concocted after wanting to recreate a cannoli I had ages ago and remembering thoughts that they'd be awesome to make myself. Cannoli are Sicilian pastry desserts, the singular is cannolo, meaning "little tube" can be filled with either fresh ricotta or pastry cream ( à la American style).

Fishcakes can make for a tasty tea time meal. Crispy on the outside but soft and fluffy on the inside- they're easy, relatively quick to make and involves getting your hands messy which is always fun! My mum first introduced me to this recipe from Jamie Oliver,  and I have loved them ever since.

Danish Custard Pies (Linser) from Scandinavian Baking

It's embarrassing to have to say how many cookbooks I have on the subject of baking, but let me tell you, I can never have enough! I was recently in that well known bookstore just looking in the cookbook section as you do, and came across Scandinavian Baking by Trine Hahnemann, I was instantly hooked just from reading the title - never mind the beautifully styled berry-spectacular layered cake on the front cover. So of course that's why I put it onto my birthday wishlist immediately.
