Carrot Cake Sandwich Cookies (with vegan option)


It's the WEEKEND and nearly DECEMBER CAN YOU BELIEVE! And we are celebrating with these fluffy and moist Carrot Cake Sandwich Cookies. Carrot cake has always been one of my favourite go-to cakes to make (and eat obviously) but I kinda fancied something a bit different for a change and so why not combine a cookie with a cake spin on things, sandwiching them between deliciously light and creamy, festive spiced buttercream.

Flourless Double Chocolate Peanut Butter Cookies


No flour? No problem...these cookies don't suffer one bit from not having what is first thought of as a baking essential ingredient. It is hard to imagine why they would work, but they just do, you'll have to take my word for it. The peanut butter and ground almonds IS definitely needed here as the key components of bulking it up, but not forgetting that of course they also bring with it so much nutty  goodness which makes these cookies so flavourful.

Orange and Thyme Sugar Biscuits

I think a large part of being a food blogger means you have to find a love for collecting a range of quirky and increasingly different kitchen wares, particularly plates, cutlery and tins (and have the budget to be able to do so, as a student - that can be a challenge for me, although I have become quite good at spotting charity shop jewels.) For those in the know, food stylists like to refer to it all as food props. I'm starting to generate a rather nice assortment which I try to fit all together like a mad jigsaw puzzle just so that it can all handily fit in my large wicker basket. This basket of props lives under my bed at my uni flat, not the average collection of items you'd expect to find under a student bed, you might say?!

Oatmeal, Cinnamon and Sultana Cookies

I do love a good dunkable cookie with a steaming mug of preferred hot beverage and boy do these do the deed! They're quite fat little things, which actually supports them mightily well with their structural integrity in the whole dunking process.

Choc Chip, Coffee and Walnut Jumbles (biscuit/cookie -ish!)


I first came across jumbles when flicking through a recipe book, it certainly caught my attention because I love the word. It's just a nice funny word to say isn't it? The use of the word "jumble" to indicate a mixture of stuff means you just 'jumble' all the ingredients into one pan, choose whatever flavour you want and hey presto! You've got yourself a nice biscuit err cookie thingy. I'm not sure what you'd technically class it as because I know Americans can get really fussy when you start calling biscuits - cookies when they clearly AREN'T!! But then again I get cross when they call our version of a scone a biscuit. Now that surely is just wrong. I must say that they do have an almost cookie quality to them in the centre, not chewy but on the verge if you know what I mean. Then on the outer edges they're more biscuity (if that's even a word) and by that I mean a buttery crunchy texture not a soft moist one like a scone!

Go nuts with... my Pistachio and White Chocolate Shortbread Biscuits


Let me direct you to the world of shortbread...there are so many culinary flavour paths that you can wander down - ranging from the incredibly sweet to the indulgent savoury. I came across some hidden and long forgotten pistachios the other day.  And this is why I basically decided upon baking these beauties.

Chocolate Orange, Malteser Cookies


I haven't done a cookie recipe on the blog yet so I thought now is the time! There's something a little Christmas'y about these cookies too, the flavour combination of chocolate orange reminds of that familiar little box stuffed in your stocking (you know the ones). I also really love the crunchyness of maltesers and of course more chocolate...as if whole chocolate chunks were not enough!?
