Carrot Cake Sandwich Cookies (with vegan option)


It's the WEEKEND and nearly DECEMBER CAN YOU BELIEVE! And we are celebrating with these fluffy and moist Carrot Cake Sandwich Cookies. Carrot cake has always been one of my favourite go-to cakes to make (and eat obviously) but I kinda fancied something a bit different for a change and so why not combine a cookie with a cake spin on things, sandwiching them between deliciously light and creamy, festive spiced buttercream.

Pandiramerino (a.k.a Rosemary and Raisin Buns)

It's been a good while since I've made a bread recipe on here, mainly because they just take that little bit more time to muster up between proving, and with uni life, well, it can 'prove' rather tricky to fit in with studying (yes, the word play was intended there.) However, with semester two not commencing till February (yeah, it does seem a long break with Christmas as well) but I'm not gonna complain cuz it means I now get to do this.... make bread again! Wooooo.

Lovely Lavender Loaf with Blueberry Icing


The three L's, lovely lavender loaf... this cake has real summer vibes and is perfect for the weekend when you just want to sit outside and chill in the sunshine, and eat of course! I have dabbled with lavender in baking before, but with raspberries, it was one of my very first blog posts which I did way back in July 2014. OMG, that was over 2 years ago. How time flies! This week though, it's someone writing for me on my blog, and here we have Carly Trigg from My Well Being Journal - A blog dedicated to staying healthy, making good food choices and dealing with IBS in a positive way. I have to admit that I'm rubbish at even selecting recipes to make that are flour-free or sugar-free or anything free-from for that matter! Summer's on it's way: No-Churn One-Step Coffee Ice cream


Well hope everyone is enjoying what's left of their Easter bank-holiday weekend, I am but then again I'm still off college for another week so yeahhh!! I've been getting into the holiday spirit of things with my first ice cream recipe of the year and it seems that for once the weather is playing along too. All is good.

There's more to pumpkins than pumpkin pie...




Well as promised here's mine and my mum's combined creation  for spiced pumpkin soup. It's not spiced as in hot, hot fiery! But more a subtle warming hint and adds to the lovely flavour of the pumpkin. We've also added a can of chopped tomatoes and a couple of potatoes...to make it interesting.

Pretty Rose Biscuits

As the summer holidays draws to a close (and I start sixth form next week) I felt the need for a nice summery biscuit which echoes all that is great about this time of the year. Smells which reflect an English cottage garden; delicate in both flavour and colour - these pretty biscuits are a huge step away from the giant chocolate chip cookies which predominantly own the 'cookie scene'!

Courgette glut anyone? I have the answer!


             
I'm all for using seasonal ingredients...and as it's summer time - it can only mean one thing - an abundance of courgettes! We used to grow courgettes in our little vegetable patch; they were easy to start off and a pleasure to just watch them bloom without huge amounts of nurturing.
