Carrot Cake Sandwich Cookies (with vegan option)

It's the WEEKEND and nearly DECEMBER CAN YOU BELIEVE! And we are celebrating with these fluffy and moist Carrot Cake Sandwich Cookies. Carrot cake has always been one of my favourite go-to cakes to make (and eat obviously) but I kinda fancied something a bit different for a change and so why not combine a cookie with a cake spin on things, sandwiching them between deliciously light and creamy, festive spiced buttercream.

Flourless Double Chocolate Peanut Butter Cookies

No flour? No problem...these cookies don't suffer one bit from not having what is first thought of as a baking essential ingredient. It is hard to imagine why they would work, but they just do, you'll have to take my word for it. The peanut butter and ground almonds IS definitely needed here as the key components of bulking it up, but not forgetting that of course they also bring with it so much nutty  goodness which makes these cookies so flavourful.

Vegan Coffee & Biscoff Baked Doughnuts

It's been awhile since I last made some baked doughnuts (see my other doughnut recipe here) and so I felt it was about time again to come up with another recipe. This one, my friends, is vegan, yes that's right, anybody, vegan or not can enjoy these lovely cakey rings of joy!

Double-Choc Digestive Brownies

Brownies are such a treat. So indulgent and naughty, they really are something to be eaten in moderation (as all treats should be) and these ones are no exception but offer something a bit different. Yes that's right, they have biscuits on them too! A double whammy of naughtiness and if you are ever in that predicament as to whether to have a cake or biscuit (I know I am on a regular basis), now you can have both to satisfy greedy needs with my Double-Choc Digestive Brownies.

Oatmeal, Cinnamon and Sultana Cookies

I do love a good dunkable cookie with a steaming mug of preferred hot beverage and boy do these do the deed! They're quite fat little things, which actually supports them mightily well with their structural integrity in the whole dunking process.

Baked Banana Choc Digestive Doughnuts

Some people find it easy to write out and about in busy places like at the park or library, although I’d much rather prefer the silence and comfort of being alone. So as I’m currently sat on this 5hr train on my way up to Edinburgh to visit my friend, this post is proving rather difficult to write. But making the most of this boring journey is a strong priority of mine as with university and work I have hardly found the time to blog – evidently.

Chai Latte Creams

Drink your chai latte and eat it too with these rich, melt-in-the mouth sandwich cookies...

From when I first put vanilla chai into my cake I knew me and this spiced tea were going to be good friends for life!

Coffee and Walnut Shortbread

Officially mid November, and by the time I get hastily home from college these days it's barely daylight, so I'm finding it increasingly difficult to take decent photos with natural light (if any that remains beyond 4 o'clock!) Shortbread seemed like an obvious win win for being quick and simple. Made using a food processor may I add.

Choc Chip, Coffee and Walnut Jumbles (biscuit/cookie -ish!)

I first came across jumbles when flicking through a recipe book, it certainly caught my attention because I love the word. It's just a nice funny word to say isn't it? The use of the word "jumble" to indicate a mixture of stuff means you just 'jumble' all the ingredients into one pan, choose whatever flavour you want and hey presto! You've got yourself a nice biscuit err cookie thingy. I'm not sure what you'd technically class it as because I know Americans can get really fussy when you start calling biscuits - cookies when they clearly AREN'T!! But then again I get cross when they call our version of a scone a biscuit. Now that surely is just wrong. I must say that they do have an almost cookie quality to them in the centre, not chewy but on the verge if you know what I mean. Then on the outer edges they're more biscuity (if that's even a word) and by that I mean a buttery crunchy texture not a soft moist one like a scone!

It's beginning to look a lot like Christmas...

I seem to be on a bit of a biscuit roll here, first the chocolate orange, malteser cookies and now this. I'm certainly getting into the Christmas spirit by making these wonderful Scandi cookies, otherwise known as Swedish 'pepparkakor'- pepper biscuits and I know what your thinking...no they don't have pepper in them.

Edd Kimber's Custard Creams

I seem to be going down a nostalgic baking route just lately, and so making custard creams is no exception. There is something just so simple but yet totally satisfyingly good about these classic biscuits. I can always remember that at Christmas time, when I was little,  my mum would always buy that certain biscuit selection box named 'Family Circle'... I know cringe right - do you remember that certain box too?

Pretty Rose Biscuits

As the summer holidays draws to a close (and I start sixth form next week) I felt the need for a nice summery biscuit which echoes all that is great about this time of the year. Smells which reflect an English cottage garden; delicate in both flavour and colour - these pretty biscuits are a huge step away from the giant chocolate chip cookies which predominantly own the 'cookie scene'!

Best Ever Chocolate Chip Shortbread

So let's turn the conversation to shortbread...everyone likes shortbread right?! And who doesn't like chocolate...put the 2 together and you got yourself a damn good dunker for your tea (or coffee...whatever!)
