Berry Muesli Overnight Oat Jars
This scarcely counts as a recipe as the method is pretty much a one step process which couldn't be easier, but think of it as more of a recipe suggestion on how I like to prepare overnight oats. It's my go-to recipe which I like to have on a frequent basis throughout the week for a healthy start to the day (minus the optional flavourings of chocolate - if we're being factually correct!)
I used to make overnight oats with well, oats, and that would be that. But when I ran out of them one time and all I had was a bag of muesli kicking around I thought it would do the job just as well since it's mainly oats after all. And what a trick this turned out to be with all the added extras that muesli already contains, I've carried on doing it that way ever since.
The very berry luxury muesli I like to use contains a sweet and zingy blend of dried cranberries, blueberries, sultanas, freeze dried raspberries and cherries which plump up with the soaking overnight making them all juicy, so I'd really recommend using a fruit mix like that, but regular porridge oats would work too as the traditional replacement.
Breakfast can be quite a monotonous meal time, often becoming boring with repeatedly eating the same thing just for the time saving ease of it, but the great thing about overnight oats is the flexibility of flavourings and the fact that you can prepare a range of jars for the week ahead that will keep for days...so you could quite literally have a different jar for everyday of the week. I've given 7 suggestions below to start you off with some inspiration.
I like to use a simple ratio of 1 part muesli to 2 part milk which doesn't create that overly stodgy thick texture and it's equally not too loose either, but if you prefer it thick add less milk. This recipe is perfectly suitable for vegans, just be sure to use a plant milk and check that any added flavourings you choose are vegan friendly too.
Berry Overnight Oats (vegan option)
Per 1 serving
Ingredients:
60g berry muesli (or muesli of your choice)120ml milk (dairy or plant alternative)1 tsp maple syrup 2-3 strawberries, sliced
Optional added flavourings (pick one or mix it up):1 small drop vanilla extract1 small drop almond extractpinch of cinnamon 1 tbsp chocolate hazelnut spread 1 tbsp peanut butter 1 tbsp almond or other nut butters1 tbsp chocolate chips
Optional toppings: Handful of blueberries 1 banana, sliced
Method
The night before you plan to eat your overnight oats, add the muesli, milk and syrup to a jar, with 1 sliced strawberry, reserving the rest of the fruit to add on top before serving. If choosing to add any flavourings now is the time to add and then stir the jar contents to combine well.
Cover the jar and refrigerate overnight, you can also refrigerate over several days if your making a few to last the week.
Before serving, enjoy with added toppings such as the reserved sliced strawberries, blueberries, banana and drizzle over a little maple syrup for optional added sweetness.
